The hanging tender is a rare part of the beef. It is a cut under the ribs and opposite the inside skirt.
Our Hanging Tender are sliced making it convenient for yakiniku purposes. "Yakiniku" originally referred to western "barbecue" food & it is fantastic to serve simply sprinkle with rock salt & black pepper.
Please note Hanging Tender has a darker colour tone, similar to the Claret colour.
The main reason is Hanging Tender contains more myoglobin than other meat, which results in heavier iron.
It is also known as hanging steak, butcher's steak, and butcher's cut.
