Another cut many would consider a butcher's secret. The oyster blade cut has other names such as flat iron or top blade. It's very richly flavoured and generously marbled. Beware of the thin line of connective tissue right in the middle of this cut which may be a bit chewy. Some people may prefer this extra bit of chew to their steak but otherwise the rest of this cut is quite evenly marbled and therefore very juicy.
