The rib cap, also known as lifter meat or wedge is a commonly overlooked part that’s cut from the outside of the rib. Underrated and another true butcher’s secret cut.
Our rib cap are sliced making it convenient for yakiniku purposes. "Yakiniku" originally referred to western "barbecue" food & it is fantastic to serve simply sprinkle with rock salt & black pepper.
