Mediterranean Oregano, milder in flavor than the Mexican variety, was used by the ancient Romans. Also called "Joy on the Mountain," it is interchangeable with marjoram.
Mix 1 teaspoon with 2 tablespoons oil to baste chicken, pork chops or roasted vegetables.
Of all the dried herbs, oregano has one of the highest antioxidant levels. Just one teaspoon of dried oregano leaves has as many antioxidants as three ounces of almonds and ½ cup of chopped asparagus.
