Orecchiette are among the most popular typical pastas, evoking the name of a single region, Puglia, of which they are the undisputed symbol. Very tasty in the traditional version with turnip greens, the recchiètedde belong to the strascinati family and to produce them a knife with a rounded tip and without a handle is used, the sferre, with which a cylinder of pasta is dragged on the pastry board to form a small disk which is then overturned on the thumb and then shaped to obtain the characteristic hollow.
