This is Spain’s best-known ewe’s -milk cheese. It is named after the province where it is made – Mancha, home of Don Quixote.
Serve as a cheese course with quince paste or fresh figs and honey. Alternatively add to a tapes selection with chorizo, Iberico ham, black olives.
