New Zealand is renowned for its lamb produce and the French cut lamb rack is easily the most popular cut in the Hong Kong market. Buy the whole rack (usually around 8 chops) or have us cut a few chops out for you (individual chops come in pairs), whichever fits best for your catering needs. Either way, the French cut, where the membrane and meat between the bones have been removed, makes it convenient for you to just grab it by the bone like a drumstick and bite away.
